Frozen Chocolate Banana Bite Pops

Frozen Chocolate Banana Bite Pops are a perfect bite-sized treat! Make them for a party or a mid-afternoon snack. They’re super easy to make and only require 3 ingredients!

This treat is being brought to you by the COOL and AWESOME Sophie. Don’t EVER try and call her cute or pretty, she’s not into that! 

Yesterday afternoon, COOL Sophie really wanted to make popsicles. I am never one to turn down a treat, so we got to work looking for ingredients in our pantry that would make the perfect popsicles. (It was freezing and snowy outside so I really didn’t want to have to go to the store.)

We settled on frozen chocolate-covered bananas because they’re easy to make, BUT we only had 3 bananas, so we decided to chop them up and make cute Frozen Chocolate-Covered Banana Bite Pops instead. There are 6 people in our family and we really like to share.

 

 

We started by chopping the 3 bananas into 1-inch slices and we pushed sucker sticks into the center of each one…until we ran out of sucker sticks, then we used toothpicks because I was NOT going to the store in the icy cold weather! HAHA!

 

 

 

We let the bananas freeze for about 3 hours, so they would stick to the sucker sticks and so they would be easier to cover in chocolate. 

 

 

After the bananas were hard and completely frozen, we melted our chocolate chips with a little bit of coconut oil in the microwave. I like using coconut oil, because it hardens back up at room temperature, so it doesn’t take as long to set up as opposed to vegetable oil.

***You need a little oil or butter to help your chocolate chips melt.  Or you could use chocolate melting wafers; which are just chocolates with more oil added to them than normal chips. 

 

 

Here’s where I’d do something different. We melted all of our chocolate at once, next time I would melt the chocolate in small batches. The frozen pops made the chocolate seize up faster than normal, so I had to keep adding coconut oil and melting them again. 

 

 

As soon as you dip your bananas, make sure you add your sprinkles so they’ll stick.  You could also add crushed nuts, Oreo’s, or drizzle melted white chocolate on the top! Go crazy! 

 

 

I would also suggest keeping the baby in the high chair while making this, and bribing her with a chocolate pop to keep her happy; otherwise, she might dump the sprinkles all over the ground…

 

 

I had to change her outfit 3 times that day! She was getting into everything!!! 

 

 

Finally, pop those delicious frozen chocolate-covered banana bite pops back into the freezer for a half-hour or so, so the bananas are cold are refreshing when you bite into them.

Ingredients
  1. 3 bananas
  2. sucker sticks
  3. 1 1/2 cups chocolate chips, any kind will work
  4. 2 T coconut oil
  5. sprinkles, or any topping you want (optional)
Instructions
  1. Slice bananas into 1 inch round slices.
  2. Push sucker sticks into the center of each one.
  3. Freeze bananas on wax paper or non-stick silicone sheet for 3 hours, or until hard.
  4. Melt chocolate and coconut oil at 50% power, for 1 minute intervals, stirring frequently, until chocolate is melted.
  5. Dip frozen banana pops into chocolate, tap off excess chocolate.
  6. Immediately sprinkle toppings on top.
  7. Freeze pops for an additional half hour to harden up again.
Notes
  1. Use white chocolate chips instead, or top with nuts, Oreos or drizzled white chocolate! Serve immediately, or place pops in a freezer bag and save them for later!
