Roasted Tomatoes

We have a ton of tomatoes left over from our last recipe, so we decided to make roasted tomatoes! To put on top of pasta and pizza!

We love tomatoes but lately I can’t eat them as fast as I used to. We didn’t want to waste them so we decided to roasted them in the oven and use them for pizza and pasta! Matt is a smart guy and came up with this idea all on his own. Anyways dinner tonight is going to be awesome with our roasted tomatoes!


  • 3 ripe tomatoes
  • 1 tablespoon olive oil
  • 1/8 teaspoon Italian seasoning
  • 1/8 teaspoon basil
  • salt and pepper to taste


  1. Half the tomatoes and then slice them thin.
  2. Sprinkle the tomatoes with olive oil, Italian seasoning, basil, salt and pepper. 
  3. Broil at 400 degrees for 4 minutes. Then lower the temperature to 200 degrees for 1 hour and half.
