We have a ton of tomatoes left over from our last recipe, so we decided to make roasted tomatoes! To put on top of pasta and pizza!
We love tomatoes but lately I can’t eat them as fast as I used to. We didn’t want to waste them so we decided to roasted them in the oven and use them for pizza and pasta! Matt is a smart guy and came up with this idea all on his own. Anyways dinner tonight is going to be awesome with our roasted tomatoes!
- 3 ripe tomatoes
- 1 tablespoon olive oil
- 1/8 teaspoon Italian seasoning
- 1/8 teaspoon basil
- salt and pepper to taste
- Half the tomatoes and then slice them thin.
- Sprinkle the tomatoes with olive oil, Italian seasoning, basil, salt and pepper.
- Broil at 400 degrees for 4 minutes. Then lower the temperature to 200 degrees for 1 hour and half.
