Sometimes I come home and think what do I have in my kitchen that I can make that would be super delicious! We had all of this stuff and on hand and were super happy with our results. In fact, I ate two drumsticks and Matt ate four.

I can tell when Matt likes what I made because we won’t have leftovers. Plus who doesn’t like crispy chicken, and even better it’s not deep-fried but baked. That’s a win on all fronts!

Buttermilk Crispy Chicken 

Ingredients

  • 6 drumsticks
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups buttermilk
  • 1 tablespoon lemon juice
  • cooking spray

Crust

  • 2/3 cup panko bread crumbs
  • 1/2 cup crushed cornflake crumbs
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon dried parsley
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder

 

Directions

  1. In a bowl whisk together buttermilk, kosher salt, paprika, garlic powder, pepper and lemon juice. Pour into a Ziploc bag, add chicken and refrigerate overnight.
  2. Preheat oven to 400 degrees. Spray a baking sheet with oil.
  3. In a shallow bowl, combine the panko, cornflake crumbs, parmesan, salt, parsley, paprika, onion powder, garlic powder, and chili powder. Combine.
  4. Remove the chicken from the buttermilk, dredge each piece in the crumb mixture, and put the pieces onto the cookie sheet. Spray the tops of the chicken with oil.
  5. Bake until golden brown and cooked through. 40 to 45 minutes.

I really like the fact that this recipe has so many spices in it, it makes up for the flavor that would come from the deep fry.
