I’m always looking for new ways to introduce more veggies into my families diet. My family is pretty good about eating their vegetables but some recipes are better than others. I have never tried roasting my veggies before but I’m glad that I did! It gives them a totally different flavor and feels a little fancy. We are all about sauces, so this recipe is right down our alley. If you have a picky eater, this might help you with your battle!

8 cups cauliflower florets
8 cups broccoli florets
1/4 cup olive oil
1 teaspoon salt
1 teaspoon pepper
2 cloves garlic, minced
1/2 teaspoon hot paprika
1/2 teaspoon smoked paprika
1/3 cup plain yogurt

  • Heat oven to 400 degrees. In a large bowl, toss cauliflower, and broccoli with 3 Tablespoons of the olive oil, 1/2 teaspoon salt, and the pepper.
  • Distribute over baking sheets in one layer. Roast for 15 minutes. Stir and roast 10 minutes more.
  • Meanwhile, heat remaining 1 Tablespoon olive oil in a sauté pan over medium heat. Stir in garlic and both paprika’s; cook for 2 minutes. Pour into the yogurt and season with remaining salt. Drizzle veggies with the yogurt sauce.
