Roasted Cauliflower and Broccoli with Spicy Yogurt Sauce
I’m always looking for new ways to introduce more veggies into my families diet. My family is pretty good about eating their vegetables but some recipes are better than others.
I have never tried roasting my veggies before but I’m glad that I did! It gives them a totally different flavor and feels a little fancy. We are all about sauces, so this recipe is right down our alley. If you have a picky eater, this might help you with your battle!
8 cups cauliflower florets
8 cups broccoli florets
1/4 cup olive oil
1 teaspoon salt
1 teaspoon pepper
2 cloves garlic, minced
1/2 teaspoon hot paprika
1/2 teaspoon smoked paprika
1/3 cup plain yogurt
- Heat oven to 400 degrees. In a large bowl, toss cauliflower, and broccoli with 3 Tablespoons of the olive oil, 1/2 teaspoon salt, and the pepper.
- Distribute over baking sheets in one layer. Roast for 15 minutes. Stir and roast 10 minutes more.
- Meanwhile, heat remaining 1 Tablespoon olive oil in a sauté pan over medium heat. Stir in garlic and both paprika’s; cook for 2 minutes. Pour into the yogurt and season with remaining salt. Drizzle veggies with the yogurt sauce.
