Squash and Sausage Bake

 

Squash and Sausage Bake! Chances are that wherever you are right now, it’s cold. I’m in Florida as I type this (which may make a few of you giggle) but this morning it was 38 degrees when I walked the dog, and it’s supposed to freeze tonight!

For FLORIDIANS, I’ve got to say: THAT’S COLD!  And when it’s cold I always like to make warm, filling foods. Foods that fill the entire house with amazing smells. Foods that get in your belly and settle in so nicely that you don’t even care how cold it is outside.

Like soup. Except, if you ate soup all the time, you’d get bored with it rather quickly. So, instead…allow me to present:

Squash & Sausage Bake

1 medium butternut squash, peeled and cut into 1/2-inch cubes (about 2 and a half cups)

2 apples, sliced

1 cup seedless red grapes

1 small red onion, chopped

2 teaspoons olive oil

1 teaspoon caraway

3/4 teaspoon sea salt

1/4 teaspoon fresh ground black pepper

6 bratwursts or Italian sausages

It’s really not that many ingredients! (Yay for a budget-friendly meal, too!)

 

DSC_0255  1. Preheat the oven to 450 degrees 2. Combine squash, apples, grapes and onion. (Don’t you love how colorful it is?!)

DSC_0259  3. Sprinkle with oil, caraway, salt and pepper, then toss to coat.

DSC_0260  4. Pour into a 13X9-inch pan, or a large roasting pan or rimmed baking sheet, and arrange your bratwursts over the top.

DSC_0262 DSC_0263  5. Bake until brats are browned and hot all the way through, and the squash is very tender. (Mine took 35 minutes). This is seriously one of my favorite things to pull out of the oven!

Squash and Sausage Bake  The brats are perfectly browned and so plump and juicy, and the apples and squash have softened just enough to be perfectly delicious! The onions have added just the right flavor, and the grapes have split and let their juices flow through the whole dish. (Now I’m hungry again.)

DSC_0265 Sometimes I’ll serve this with rolls and a salad, but it really is phenomenal all by itself, too!

  1. I looked forward to the cold snaps in Tampa when we lived there! We moved to Bahamas few months back only recently got a nice cold snap. Lowest it got was in the 60s but it was quite cold in our house cause there isn't a furnace. I don't think any of the houses here have them because it's rarely cold. It was a nice break from the heat but didn't last long. It's going to be in the high 70s and low 80s again!
    The sausages look yummy! I'm not sure I'd like the fruit in the dish though. Wish I could sample your dish so I'd know whether or not I'd want fruit in it. LOL

  2. It's certainly an attractive dish and sound yummy with that combination of ingredients!
    Here in Georgia, when the temp drops below 55, we break out the jackets and start complaining of the cold. We would never be able to survive up north!
    This dish looks so comforting for the end of winter.
