If you know my hubby Mike, you know that he does not accept soup as a main course meal. When we were first married, over 11 years ago, I made soup all the time. I LOVE soup! I could eat if for every meal.  After a few months, Mike finally got the nerve up to tell me that he didn’t think soup should be a main meal! “It’s an appetizer!”

He said. So, after that explosion of opinion. I told him…”Too dang bad!” And so, after much compromise. We settled on a soup that he really enjoys, so I can have my soup and eat it too! Broccoli and Cheese Soup; of course, it’s his mother’s recipe, so he really enjoys it, and so do our kids! Mike actually whipped up a batch of this cheesy goodness a couple weeks ago.

Pregnancy in the first trimester is not too much fun for me, so cooking has definitely taken a backseat. I’m lucky that Mike picks up the slack!

Broccoli & Cheese Soup by Julie Ulrich (Printable Recipe)

2 stalks of broccoli, chopped

1 c. celery, diced

fine Parsley for garnish

2 cubes of chicken bouillon

2 T. flour

3 c. milk

1 lb. of Velveeta cheese- diced

Broccoli Cheese Soup

Instructions:

Add diced celery and broccoli to a large pot. Cover with water and cook until tender.

Do not drain water. Add bouillon cubes. Whisk flour with milk in a separate bowl until it’s smooth with no lumps.

Pour flour and milk mixture into broth. Add Velveeta cubes. Stir until all the cheese is melted. Top soup with parsley for garnish.
