All thoughts and opinions are my own. I am so thrilled to have this opportunity to share my experience as part of this sponsored campaign from Minute® Ready to Serve Rice .
It’s January! After running around making things merry and bright through the month of December, it’s time to snuggle into a warm house and enjoy your family. With the weather so cold, all I want is comfort food that is good for me! When I had a chance to be involved with the Minute® Ready to Serve Rice sponsored campaign, I was thrilled to get a opportunity to use one of my favorite products.
We are a busy family that is always on the run, from making sure that homework is done to taking the girls to their different activities, I’m always so happy to come up with a recipe that is quick and easy to make. The great thing about casseroles is that you can make it the night before and all you have to do is throw it in the oven and in minutes you have a warm, delicious meal ready for your family.
1 1/2 cups frozen peas
1 1/2 cups carrots, chopped
1 cup onion, diced
3 cups chicken. diced and cooked ( I used a Rotisserie chicken)
1 (8 ounce) can water chestnuts, drained
1 can condensed cream of celery soup
1 cup mayonnaise
2 cups Minute® Ready to Serve Rice, prepared according to package
1 cup cheddar cheese, grated
1 teaspoon salt
1 teaspoon pepper
Panko bread crumbs
- Preheat oven to 350 degrees
- Mix all the ingredients together but the bread crumbs and pour into a greased casserole dish.
- Sprinkle bread crumbs all over the casserole.
- Bake for 20 to 25 minutes or until bubbly.
