If you remember, I told you it was Ben’s birthday a few months ago and we made him Steak Gorgonzola. Well, we can’t just make one thing on Ben’s birthday, we have to make two!!! Yes, I spoil my kids. Ben never liked salad when he was little and I would have to force him to eat veggies but now he is a salad man.
Ingredients:
For Dressing:
3 Tablespoons olive oil
2 Tablespoons red wine vinegar
2 Tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 Teaspoon Worcestershire sauce
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon black pepper
For Salad:
6 pieces bacon, cooked and crumbled
2 hard boiled eggs, sliced
6 cups lettuce, chopped
2 tomatoes, diced
3/4 cup avocado, diced
1/2 cup blue cheese, crumbled
3 cups cooked chicken, cubed
1/2 cup green onions, chopped
Directions:
- In a small bowl, whisk together all of the ingredients for the dressing and then place in the refrigerator.
- In a large bowl toss the lettuce and 2/3 of the dressing. Add the rest of the veggies to the lettuce and drizzle the remaining dressing top. Sprinkle with the crumbled blue cheese and serve.
- If you prefer a different salad dressing, go ahead and use it. The salad would be awesome with any kind of dressing.
