Southwest Chicken Salad

Lately, I have been craving salad! Maybe its all the fresh veggies and the warm weather. I love recipes that are super easy and are full of flavor. This one fits the description to a “T”! My husband always grumbles that he isn’t going to like it and even complained about the dressing, asking if I would be bugged if he just used the ranch in the fridge. Once he tasted it, he couldn’t stop eating it. Matter of fact, the dressing is so good that when we had a little left over, my family was dipping their chips in it.
3 cups rotisserie chicken, chopped
1 green pepper, chopped
1 cup black beans, rinsed
1 cup corn, (I used fresh but it doesn’t matter)
2 tomatoes, diced
4 green onions, sliced
1 head of lettuce, washed and chopped
1 can of olives, chopped
1/2 bunch cilantro, chopped
2 ripe avocados, diced
2 cups crushed tortilla chips
1 cup mayonnaise
1 cup sour cream
1 jalapeno,(if you want it hot, leave seeds but if you don’t remove the seeds)
1 Tablespoon dry ranch dressing
1 Tablespoon taco seasoning
1 Tablespoon lime juice
salt and pepper, to taste

  • In a large bowl, combine all the salad ingredients together, but the tortilla chips and avocado.
  • In your blender, add all the dressing ingredients and blend until smooth.
  • When your ready to serve, toss salad with the dressing and gently add the avocado and chips. My family liked the dressing to the side. You decide what works for you!
