Sarah Salad! When I met my husband there were only a few things I knew about him. The first thing I THOUGHT I knew was that his parents owned the Lion House, (A popular restaurant in downtown Salt Lake on Temple Square).

 

Well, if you know what the Lion House is, then you’d know that I was completely wrong because the Lion House is actually owned by The Church of Jesus Christ of Latter-Day Saints. You’d think I’d know that, since I’m a member and all…but nope. I’ll never live that one down.

 

His mom is; however, the manager of banquets at the Lion House, so we have a lot of family functions there. This salad is the Ulrich boys’ favorite. It is loaded with bacon, cheese, peas, green onions, and a homemade dressing. What could go wrong with that flavor combo?

 

Anyway, after years of making this exactly as the cookbook directs. We made a few tweaks to it and now It’s even more delicious if that’s even possible.

 

The original recipe calls for about half as much bacon, peas, and cheese. Which is the only way the hubster enjoys it now. If you know my husband and his brothers, you know that they are big eaters, to the point of embarrassment. ESPECIALLY on cruises, but that’s a story for another day. On with the recipe…

 

Sarah Salad… the Ulrich way!

1/4 cup of Miracle Whip
1/4 cup of Mayo
1 t. salt
1/4 t. pepper
1/4 t. sugar
1 head of Iceberg lettuce
1 package of frozen peas (10 ounces)
1 cup of chopped green onion
3/4 cup of Swiss cheese, cut into strips
6 strips of bacon, chopped and cooked

Directions:

 

Start by mixing your Miracle Whip, Mayo, salt, pepper, and sugar in the bottom of the bowl you’re serving your salad in.

You like that pink background don’t you… I knew you would…
Next, add all of your lettuce, peas, cheese, bacon, and green onions on top.

When you’re ready to serve, put on a plastic glove and mix it up. You might have a hard time keeping it in the bowl if you’re silly like me and don’t get a big enough bowl. My poor hubby was trying so hard not to spill…

Yummy, this really is delicious, and now I’m going to go make some for breakfast, just kidding…maybe…

    The salad sounds fabulous. I make a similar one, but have never thought of using Miracle Whip. Maybe Linda's got a good idea…So glad you shared!

  2. My mom used to make this salad, except it was always in layers. We called it Pea Salad, which may have been why my brothers and I never ate any…Thanks for sharing at Fridays Unfolded!
