Pico De Gallo

It’s a tradition at our house to have the favorite dinner of the family member with the birthday. Well, it was Zac’s birthday!!! When Zac was little, he always wanted funeral potatoes, strawberry 3 layer dessert and Oreo, Mint ice cream pie. Things have changed!!!! He chose Carne Asada tacos, black beans and Cafe Rio rice. Pico De Gallo is a great way to top off the tacos. It was a delicious blend of veggies and tastes great on tacos or would be great with tortilla chips. Really Yummy!
4 ripe tomatoes, diced
1/2 red onion, chopped
1 bunch of green onions, sliced
1 Serrano Chile, minced (depending on how spicy you like it, either leave in the seeds for heat or remove for a milder flavor)
1 handful fresh cilantro, chopped
4 garlic cloves, minced
1 lime, juiced
1/4 cup extra virgin olive oil
1 teaspoon salt

  • In a bowl, combine all the ingredients together.
  • Toss thoroughly.
  • Cover and place in the refrigerator for about an hour, to allow the flavors to blend.
