No Bake Chocolate Peanut Butter Cookies

Have you ever wanted a treat in the middle of the night, something you didn’t have to go get ingredients for, something easy, and something that wouldn’t make a big mess? I love chocolate, really, who doesn’t? These are perfect for all of the above and to think I had all of the ingredients in my cupboard! Here is the simple recipe.
1/2 cup butter
1 3/4 cups sugar
1/2 cup milk (I’m weird and I don’t like milk so we rarely have it in our fridge when Matt is out of town, but I had whipping cream and it worked)
4 tablespoons cocoa
1/2 cup creamy peanut butter
2 teaspoons vanilla
3 cups dry quick-cooking oats
1. Mix the butter, sugar, milk and cocoa in about a 4 quart sauce pan. Bring to a boil and let it cook on boil for about 1 minute. 
2. Remove from heat add peanut butter and stir until it is completely melted. Add in the vanilla as well.
3. Mix in the oats until it is covered. 
4. Then drop tablespoon amounts on to wax paper or tinfoil.
5. Let cool and set up.
Easy delicious treat!!! Enjoy!
