 Mmmm, This meal was scrumptious! My hubby made it for me last night after a long day of teaching dance and I was pleasantly surprised at the fact that the almond meal is a perfect substitute for flour. I hope you get the chance to make this yourself!

Almond Coconut Crusted Salmon

1 Salmon fillet
2 T coconut milk
4 T almond flour
1 T coconut oil
1 t. raw honey
1/2 lemon, squeezed
Slivered almonds and shaved coconut for garnish

Directions:

Pat dry salmon fillet with a paper towel. Heat a small saucepan to medium high and melt coconut oil in pan. Dip salmon fillet in coconut milk, I like to use a shallow plate. Next sprinkle almond flour on top of salmon. Press it down and flip it, so it sticks well to both sides. Cook over medium heat for about 3 minutes on each side, or until the fish becomes flaky.
Drizzle salmon with honey and lemon juice, and garnish with almonds and coconut.
SO GOOD! And it’s clean as long as you use organic ingredients!
