2 Minute Chocolate Cake in a Mug

 2 minute chocolate cake
The other night, I was craving a treat and with nothing in the house that would satisfy my craving. I had seen on the Today show earlier, that you could make a chocolate cake in a mug and they said it was delicious! This was a perfect time to try it and you know what??? It was delicious!!!! This is an awesome idea when you want something little and you don’t want a whole cake in house because your afraid you will devour the whole thing!
2 Tablespoons vegetable oil
1/4 cup milk
1 egg
1 teaspoon vanilla
1/3 cup self-rising flour
1/4 cup sugar
2 Tablespoons unsweetened cocoa powder
1/4 cup chocolate chips

  • In a small bowl, whisk together the vegetable oil, milk, egg and vanilla. Then add, flour, sugar and cocoa and chocolate chips, then whisk to combine.
  • You can pour the batter into 2 medium mugs or 1 large mug.
  • Microwave on “high” for 90 seconds. Make sure to check to see if the cakes are puffed and bounces back by a light touch. If not, microwave for an additional 30 seconds. Serve!
  • We lightly sprinkled powdered sugar on top.

Don’t have self-rising flour? You can substitute for all purpose flour, plus 1/4 teaspoon baking powder and a pinch of salt.
