Sassy Lemon Lime Cupcake

I can feel it in my bones, spring is just around the corner, or I’m just hoping really hard!!!!! Fresh flavors remind me of spring and fresh lemon and lime fit great in the category. The cupcake is so fresh and light, it will be hard not to eat more than one!!!
Ingredients:
For the cupcakes:
1 White Cake Mix
3 egg whites
1/3 cup oil
1/2 cup buttermilk
1/2 cup Sprite
1/2 cup sour cream
4 Tablespoons lime juice
2 Tablespoons lime zest
Lemon Frosting:
1 stick butter, softened
8 ounce cream cheese, softened
3 Tablespoons lemon juice
2 Tablespoons lemon zest
2 Tablespoons lime zest
4 to 5 cups powdered sugar
Directions:

  • Preheat oven to 350 degrees. Put your liners into the cupcake pan.
  • In a large mixing bowl, add egg whites, oil, buttermilk, Sprite, sour cream, lime juice and lime zest until smooth.
  • Add cake mix and mix until smooth and there isn’t any lumps.
  • Fill each liner about 2/3 full. Bake for 18 to 22 minutes, or until the toothpick comes out clean. Let cool.
  • Frosting: Whip the butter and cream cheese for about a minute. Add lemon juice, lime zest and lemon zest and continue to whip.
  • Slowly add the powdered sugar and continue to beat until its the right consistency. If its too soft to decorate with, add a little more sugar or if its too thick add a little milk.

  1. I can feel it too. And no matter if it's true or not, I'm getting my garden in shape this weekend!
These cupcakes do look very Spring-like. And I love sass! Haha.
Thank you for sharing with See Ya in the Gumbo this week.
