If you’ve been paying attention to my posts lately, we are trying really hard to make better food choices. This recipe actually happened on accident.
I was trying to make a cauliflower pizza crust, but it failed. I wasn’t sad though, because we ended up with the most delicious Cauliflower “mashed potatoes” I’ve ever made. These are great because they are low-carb and packed with protein!
Cauliflower “Mashed Potatoes”
1 head of Cauliflower, chopped
1/4 cup Parmesan cheese
2 eggs
2 T butter
1 T garlic salt
Directions:
Bring a heavy pot of water to a boil and add chopped cauliflower, let it boil for 15 minutes or until the cauliflower is fork-tender. Drain cauliflower and puree in small batches until smooth like butta!
Add the cauliflower back to an oven-safe heavy pot and add parmesan cheese, butter, beaten eggs, and garlic salt. Mix well. Put mixture into the oven at 375 degrees Fahrenheit for about 20 minutes or until the top is golden brown. Serve warm!
My kids loved these and kept telling me how delicious the mashed potatoes were. I didn’t tell them it was cauliflower and they didn’t think anything was off!
