After making my husband buy a bag of black eyed peas and finding the fun facts about this little gems, I thought we should make something out of them.
I have never used the black eyed pea before and it was kind of fun to create with something new! It’s suppose to give you good luck all year if you eat them on New Years Day but this salad is packed with flavor and would be a great addition to any meal.
15 ounce can black eyed peas
3 cloves garlic, minced
3 Tablespoons lemon juice
1 Tablespoon extra virgin olive oil
1 teaspoon cumin
A pinch of crushed red pepper flakes
1 teaspoon salt
1 cup corn
1 cup cherry tomatoes, quartered
1/4 cup red onion, diced
1/4 cup cilantro, chopped
1 jalapeno, seeded and diced
1 avocado, diced
- Rinse and drain the black eyed peas
- In a large bowl, combine all of the ingredients but the avocado and mix well.
- Refrigerate for at least 20 minutes. When your ready to eat, gently mix in the avocado and serve.
- We ate the salad with baked crackers!
