Cookie Dough Cheesecake Bars

Lisa is always begging for some kind of cookies and she loves chocolate chips, so I’m always looking for something new that she will excited about. When she found out that I was making these, she announced to the family that she was the taste tester. Good news!!!! She loved them and asked me to make them again.
Ingredients:
For The Crust
2 cups Vanilla Wafers crumbs
6 Tablespoons butter, melted
Chocolate Chip Cookie Dough
5 Tablespoons butter, room temperature
1/3 cup packed brown sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
3/4 cup flour
1 cup chocolate chips
Cheesecake Filling
10 ounces cream cheese, room temperature
1/4 cup sugar
1 egg
1 teaspoon vanilla extract
Directions:

  • Preheat oven to 325 degrees. Line your 8 inch baking dish with parchment paper, allowing a little overhand and spray with non stick spray and set aside.
  • Mix the melted butter and Vanilla wafer crumbs until thoroughly combined. Press mixture into the bottom of the pan. Bake in oven for 6 minutes. Remove pan. Don’t turn off the oven, your going to need it later.
  • While the crust is cooling, prepare the chocolate chip cookie dough. In a bowl, beat butter, brown sugar, salt and vanilla until smooth and combined. Mix in the flour until incorporated. Mix in the chocolate chips. Set aside.
  • In a different bowl, cream together the cream cheese and sugar until smooth. Mix in the egg and vanilla. Pour the cheesecake batter onto the crust. Make clumps of the cookie dough and flatten the clumps with your hands. Place the cookie dough onto the top of the cheesecake batter. Be sure to use all of the dough. You will cover all the cheesecake layer.
  • Bake for about 40 minutes or until the top feels dry and firm, and the entire pan looks set if you shake it gently. Let bars cool completely.
  • Lift the bars out by the edges of the parchment paper; slice into desired size.
