Sometimes I just have to remind myself that I really do enjoy healthy foods. Whenever I’m trying to eat healthier, I simply make a list of my favorite things to eat, that don’t feel like diet foods, and that I would enjoy even when I’m not trying to lose weight. So I made a list and I thought I would share it with you.
1- Shrimp with cocktail sauce. Make your own cocktail sauce by combining organic ketchup, horseradish and a squeeze of lemon. Delish!
2- Chicken Teriyaki with vegetables- Load up on the veggies and add a little bit of teriyaki after you steam them. You could add brown rice, or eat it without. Both ways are yummy.
3- Organic whole grain chips with fresh salsa- You can make your own salsa by combining fresh tomatoes, garlic, onion, cilantro, jalapeno, and a squeeze of lime. If you have only one serving of chips you are only consuming about 120 calories. Turn it into a meal by adding a grilled chicken breast.
4- Lettuce wraps- I love using butter lettuce for my wraps. These are great for lunch. I add avocado, tomatoes, banana peppers, turkey and a slice of cheese and wrap it up like a tortilla wrap. I always use a paper towel to hold it all together, since it can be a little messy.
5- Chopped cabbage salad- I use the coleslaw cabbage mix in the produce section. I add cherry tomatoes, avocado, celery, onion, and carrots. Then I add a little bit of mayo and apple cider vinegar and toss it together. It’s delicious. I know Mayo isn’t healthy, but a little goes a long way and the whole meal is very low in calories.
6- Chicken Tortilla Soup- I buy a rotisserie chicken and shred it, add it to chicken broth, white northern beans, cilantro,and a squeeze of lime and I’m set. I add avocado to the top with one tortilla chip crumbled on top. There’s no rules to this recipe, just add what you like and enjoy!
7- Crab legs- I LOVE seafood and Mexican food, can you tell? I only buy crab legs when they are on sale. Simple steam them until they are warm in a large stock pot. Squeeze lemon on top and enjoy with your favorite steamed veggies!
8- Lean steak with roasted potatoes. I buy the really small 4-6 oz. steaks, season them and grill them. Then I roast potatoes in my oven with a little bit of olive oil and sea salt.
9- Vegetable lasagna- I love lasagna! I make mine by combining every veggie I have in the house to my tomato sauce. I use thinly sliced zucchini instead of noodles, and I use cottage cheese and mozzarella to hold it together. You could also add some ground turkey if you wanted.
10 – Spaghetti Squash Spaghetti- I think spaghetti squash is great with a little bit of butter and salt on it, but it’s especially great with tomato sauce! My kids love it this way too. Simply slice your spaghetti squash in half, and roast it in the oven at 350 degrees until it’s soft. Time varies depending on the size of your squash. Scrape the squash out and cover with your favorite sauce and a little cheese and you’re set!
