We love to order Chinese food on the weekends! In the past, it so delicious and we would always order our favorite dishes. A couple weeks ago, with preparing for the wedding, we decided to order from our favorite Chinese Restaurant. My husband was so disappointed when he opened the ham fried rice and realized that you couldn’t find any ham or veggies!
My husband served his mission in Korea and so he has become “our” expert on fried rice and has always made us yummy rice! After the disappointment of the past weekend, he whipped up his famous rice. Its quick and easy and my younger kids love it!
4 cups cooked rice, (we use the long grain rice, but minute rice works!)
1 to 2 teaspoons butter
1/2 cup onion, diced
1/2 cup carrots, diced
1/2 cup frozen peas
1 cup ham, diced
1 to 2 teaspoon sesame oil
eggs ( you can serve a sunny side up egg on each serving or scramble an egg to the mixture)
- In a large skillet, melt butter. Add the onion, carrots and sauté for 2 to 3 minutes.
- Add the peas and ham.
- If want the egg scrambled, add whipped egg, cook and stir until the egg is completely cooked.
- Add rice and sesame oil, stirring continually until the rice is heated completely through.
- Remove from heat; season with salt, pepper and soy sauce.
