Carrot and Apple Pudding with Caramel Sauce

Now that we are in full swing into the holidays, memories flood our minds of past holidays. My husband started craving one of his favorite holiday treats! Mike’s mom has a whole recipe tin full of delicious recipes and this one is so good!

2 cups apples, grated
2 cups carrots, grated
1 1/2 cups sugar
4 eggs
1 cup nuts, optional
4 teaspoons baking powder
1/2 cup milk
3 cups flour
2 cups raisins
1 cup butter, softened
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon soda
1 teaspoon salt
2 teaspoon vanilla

  • Preheat oven to 350 degrees
  • Cream sugar, vanilla, milk and butter. Add eggs one at a time until well blended.
  • Combine flour, cinnamon, nutmeg, salt, baking soda and baking powder in a separate bowl. Pour dry ingredients into the butter mixture and mix until its well combined.
  • Mix in the carrots, apples, raisins and nuts.
  • Pour into a well greased 9×11 baking dish. Bake 40 to 50 minutes or until you can press down in the middle and it bounces back.

1 cup butter
1 cup sugar
1 cup heavy cream
2 Tablespoons cornstarch

  1. Melt butter in saucepan on a medium heat. Lower the heat after the butter is melted. Add the sugar. In a small bowl combine cream and cornstarch until it has a smooth consistency.
  2. Pour cream mixture in the saucepan and mix well.
  3. Do not boil. Cook for 10 to 15 minutes, stirring occasionally. It will be slightly thickened when its done!
