Twinkie Cupcakes!

It was my cute Cassie’s Bridal Shower and since the shower was for her, she couldn’t possibly make the cupcakes! We love to find new recipes that we have never tried before. Everybody loves Twinkies, so why not a cupcake Twinkie!?! It even has the creamy filling inside!
Ingredients:
FOR THE CUPCAKES:
2 eggs
¼ cup milk
2 teaspoons vanilla
1 cup cake flour
¾ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
½ cup butter, softened
FOR THE FILLING:
3 Tablespoons butter, softened
1/3 cup powdered sugar
1 teaspoon vanilla
½ cup marshmallow spread
FOR THE FROSTING:
½ cup butter, softened
½ cup marshmallow spread
1 ½ cups powdered sugar
2 Tablespoons whipping cream
2 teaspoons vanilla
Directions:
· Preheat oven to 350 degrees. Line the muffin tins with cupcakes with liners.
· In a bowl, whisk together the eggs, milk, and vanilla; set aside.
· Combine the flour, sugar, baking powder, and salt. With the mixer on low, add the butter, mixing until dough come together.
· Add the egg mixture and mix on a low speed until incorporated then increase to a medium speed and beat until light and fluffy. Scrape the bowl, if necessary, then increase speed to medium speed and beat for about 30 seconds. The batter will look a little curdled.
· Fill cupcake liners 2/3 full. Bake for 20 to 22 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
· FILLING: Combine butter and sugar together. Stir in the vanilla and a pinch of salt. Mix in the marshmallow spread and whisk until light and fluffy. If the filling is too soft or runny, add more sugar. You might have to use up to a cup of sugar.
· FROSTING: Beat the butter and marshmallow until light and fluffy. Add the sugar, beat mixture until combined. Stir in 2 Tablespoons of cream and the vanilla. Beat on high speed for about 2 minutes.
· ASSEMBLE: Fill a decorator bag with a tip. Make small holes in the cupcakes with a sharp knife. Insert the tip into the center of the cupcake and squeeze to fill.
