Twice Baked Potatoes

I don’t know about you, but I have the hardest time coming up with new side dishes. I want them to taste amazing but I don’t want to just make the same thing over and over again! This is pretty close to our loaded potato salad but this is a warm version.
It’s delicious and really quick and easy to make! Lisa ate a WHOLE plate of this dish!!
5 pound bag of your favorite potatoes, peeled and cubed
1 pound of bacon, cooked and crumbled
8 ounce cream cheese, softened
1 stick butter, melted
1 cup sour cream
½ cup green onions, minced
2 ½ cups cheddar cheese, grated
2 teaspoons salt
1 teaspoon pepper
· Preheat oven to 350 degrees.
· Place potatoes in a large saucepan, and add enough water to cover. Bring to a boil and reduce to simmer. Cook until tender and easily pierced with a fork, about 20 minutes. Drain in a colander.
· Using a fork or a potato masher, mash the potatoes in the pan until light and fluffy. Add the cream cheese, butter, and sour cream, stir until combined and smooth.
· Add the green onions, cheddar cheese, ¾ of the bacon, salt, and pepper. Make sure it’s mixed well.
· Transfer to a baking dish that has been sprayed with non-stick spray. Top with an additional ½ cup of cheddar cheese. Bake until the top is golden brown and heated through, it will take about 30 minutes.
· Remove from the oven and sprinkle the rest of the bacon on top.
