These little gems are a great appetizer for any party!! They have the traditional taste of your favorite taco in a delicious and healthy pepper. This recipe doesn’t take long to prepare but will grab everyone’s attention.
1 pound ground beef
1 onion, chopped finely
1 package taco seasoning mix
2/3 cup water
4 bell peppers, quartered and seeded
1 can refried beans
3/4 cup shredded Mexican cheese blend
sour cream, to garnish
- In a large skillet, cook beef and onion on a medium heat. Add salt and pepper to taste. Stir occasionally, until beef is thoroughly cooked and drain. Stir in the taco seasoning mix and water. Simmer for 3 to 4 minutes or until thickened.
- Set oven to high broil. Place bell pepper halves on ungreased cookie sheet. Spoon about 1/2 teaspoon refried beans into each pepper half; top each with about 1 1/2 teaspoons beef mixture. Sprinkle evenly with cheese.
- Broil with tops 6 inches from the heat for 2 minutes or until cheese is melted. Top each with about a 1/2 teaspoon of sour cream and you can even add a jalapeno slice if you enjoy the spicy.
- Serve warm and enjoy!!!
