Last Sunday my Dad and little sister Andie stopped by on the way home from a softball tournament in Mesquite. I always try to convince people to stop at my house for dinner so I can visit a little longer with them. I love company and I especially love feeding my family.
Something about feeding people makes me feel good inside.
We didn’t really have a plan for dinner because we weren’t sure if they were going to stop or not, so we just whipped this out at the last minute and it really tasted great!
6 Chicken thighs
6 slices of thick-cut bacon
1 cup of shredded cheddar cheese
1 cup of sautéed sliced mushrooms
1 cup of sautéed sliced red onion
2 Tablespoons of olive oil
1 cup of barbeque sauce, your favorite kind is fine.
Salt and Pepper to taste.
Season chicken thighs with salt and pepper. Grill on barbeque. While the chicken is grilling, start sautéing the mushrooms and onions in the olive oil until soft. When the chicken is cooked through stack the thighs on a cookie sheet with bacon, mushrooms, onions, barbeque sauce, and top with cheddar cheese. Put the chicken under the broiler in the oven until the cheese is bubbly.
Serve with mashed potatoes or cheesy biscuits!
