I feel embarrassed even calling this a recipe, so just think of it as more of a suggestion. This is so easy to make and so much cheaper than buying an ice cream cake from an expensive ice cream store.
Ice Cream Pie
1 store bought chocolate crust
1 pint of your favorite ice cream
Directions: Let the ice cream thaw on the counter until it becomes soft enough to scoop out and mold easily. Usually the ride from the store to home is the perfect amount of time. Scoop the ice cream into your pie crust and smooth it with the back of a spoon or an icing spatula. Return to the freezer for an hour, or until the ice cream is frozen again. Smooth Cool Whip on top and drizzle your favorite syrup on the top to ‘fancify’ it.
So easy, just make it however you like it. Some of our favorite combos are chocolate crust with Oreo Mint ice cream, cool whip, and caramel and chocolate drizzle. Graham cracker crust with strawberry ice cream and Cool Whip, and Thin Mint ice cream with a chocolate crust and Cool Whip.
Apparently, my family couldn’t wait for me to snap a picture before they dug in!
