Turkey and Spinach Taquitos

I’m always trying to find recipes that are quick and easy and so incredibly yummy that you want to make it again and again! It helps if it is a little healthier as well and this recipe fits that category. My family loved this and even had seconds! As a mom, I’m thrilled to have them enjoy it and know that I have used the turkey and the spinach and its baked in the oven.
3 Tablespoons olive oil
1 onion, minced
1 Tablespoon salt
1/2 teaspoon black pepper
1 pound ground turkey
1 Tablespoon ground cumin
2 packed cups baby spinach leaves
1 can black beans, drained
1 (8 ounce) cream cheese
18 small flour tortillas
1/4 cups olive oil
1 cup cheddar cheese
1 mozzarella cheese

  • Preheat oven to 400 degrees. Spray a heavy nonstick baking sheet with cooking spray.
  • For the filling: Heat the oil on medium heat in a 12 inch pan. Cook the onions, salt and pepper, stirring constantly, until soft, it will take about 6 minutes. Add the turkey and cumin. Cook until the turkey is cooked through. Add the spinach and cook until wilted. Remove the pan from the heat and add the beans. Mash the beans until smooth, using a fork. Stir in the cream cheese.
  • Place clean skillet over medium heat. Brush each side of the tortillas with olive oil. Cook the tortillas in batches until warm, about 30 seconds. Spoon about 1/4 cup of the filling into each tortilla and roll up into a tube shape. Place the tortillas, seam-side-down, on the baking sheet and sprinkle with the cheese. Bake until the cheese is melted and the tortilla are crisp and golden, 25 to 30 minutes. Cool for 5 minutes and serve with salsa, sour cream and guacamole.
