As you learned in my recipe for Turkey Gnocchi Soup I like to use gnocchi because it sounds impressive but is actually super easy. (it’s like a potato-based pasta-ish thing so it’s as easy as spaghetti!) That is why I was so excited to find this recipe, and even more excited when the dish turned out delicious!!

 

Gnocchi Soup

INGREDIENTS:

1 medium onion, diced
1/2 cup celery, sliced
2 garlic cloves, minced
4 Tbsp. butter
4 Tbsp. olive oil
1/4 cup flour
1 quart half and half
16-ounce package gnocchi
1 cup carrots, shredded
1 cup chicken breasts, diced and cooked
1 14 ounces can chicken broth
1 cup fresh spinach, coarsely chopped
1/2 tsp dried thyme
garlic salt and pepper to taste

DIRECTIONS:

1. In a large pot, sauté the onion, celery, and garlic in the butter and olive oil*. 
2. When the onion is clear, add the flour and form a roux. Stir and cook a minute. 
3. Add the half and half. 
4. Meanwhile in another pot, cook the gnocchi. (Follow instructions on the box.)
5. Add the carrots and chicken to the stockpot*. 
6. Stir often and when it gets thicker, add the chicken broth, gnocchi, spinach, and seasonings. Cover and heat through, then enjoy!!
 
*If you have raw chicken cook it very first so that you only dirty one pan!
