I hope everyone had a fabulous 4th of July!!!! This recipe is a keeper! We love potato salad but this is a twist on the everyday potato salad. Its just like the title…….its loaded with goodness!
Ingredients:
8-10 Potatoes, cubed
1 pound bacon, crumbled
1 stick butter, softened
1 cup sour cream
1 cup cheese, grated
6-8 green onions, chopped
salt and pepper to taste
Directions:
- Boil whole potatoes for 16 minutes, they will still be a little firm, but they will cut up nicely
- Let potatoes cool and then cube them into bite size pieces
- Combine butter, sour cream and cheese
- Put cubed potatoes in large mixing bowl. Add bacon, onions and butter mixture to the potatoes. Add salt and pepper to season.
This can be served hot or cold!
