Banana Cupcakes!!

What you need for the Bananas:
½ stick butter
½ packed brown sugar
½ teaspoon cinnamon
3 ripe bananas (make sure bananas are firm enough to keep their
1 teaspoon vanilla extract
1.   In a
skillet combine the butter, brown sugar, vanilla and cinnamon. Cook on a medium
heat until butter melts and sugar is dissolved.
2.   Add the
banana slices and cook until tender, turning once for 1-2 minutes.
3.   Gently shake
the pan to coat the bananas with the sauce.
4.   Set bananas
to the side.
2 ½ cups flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup butter, softened
1 ½ cups sugar
3 eggs
2 teaspoon vanilla extract
Banana mixture
¾ cup heavy cream
1.    Preheat oven
to 350 degrees
2.    In a large
bowl cream butter and sugar until fluffy.
3.    In another
bowl combine the flour, baking soda and salt.
4.    Add eggs,
vanilla and bananas to the butter mixture and mix well.
5.    Add flour
mixture alternately with the heavy cream; blend thoroughly with the butter
mixture. Do not over mix.
6.    Pour into
cupcake pans. Fill cups about 2/3, to make sure they don’t overflow.
7.    Bake 20-25
minutes or until the toothpick inserted comes out clean.
8.    Cool in
pans for a few minutes and then remove cupcakes to counter so they can
completely cool off before frosting.
Cream Topping:
1 ½ cup whipping cream
3 tablespoons powdered sugar (add
more if you like it sweeter)
½ teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon vanilla extract
1.    Whip your
cream together with the sugar until it gets thick
2.    Add the
vanilla and spices.
3.    Place cream
in a piping bag to decorate. (you can also use a Ziploc bag with the corner cut
off, as a piping bag)
