It’s summer time and the weather is hot! My husband is obsessed with ice cream, we consistently have 3 or more tubs of ice cream in our freezer at a time! It’s a little ridiculous how much ice cream we eat in our house.

Nothing beats the heat better than Blue Bunny® ice cream! We went down to Walmart and decided to look at our options. There was so many types to choose from, the ones we choose this time is Blue Bunny® Cherry Picking Chocolate™, Blue Bunny® Pistachio Almond™, and Blue Bunny® Blu’s Birthday Party™. The best part of Blue Bunny® ice cream is with their new packaging you can see exactly what you’re getting. You can see all of the flavor swirls. Also, a great way to jazz up any summer bowl of ice cream is Smucker’s ice cream toppings. We love to do different types of recipes with ice cream but ice cream sandwiches are my favorite! These will be the best ice cream sandwiches you will ever eat! We put a little of each flavor in and tried them all!

Ingredients

  • 1 1/2 cups of all-purpose flour
  • 1/2 cup cake flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 cups of sugar
  • 3/4 cup nonalkalized cocoa powder
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 3/4 cup and 2 tablespoons butter flavored shortening
  • Your Favorite Blue Bunny Ice Cream

Directions

  1. Preheat oven to 350 degrees
  2. Cream vanilla, shortening and eggs together. In a separate bowl mix together dry ingredients. Slowly mix in the dry ingredients.
  3. Place parchment paper on cookie sheet and about a tablespoon sized balls on the cookie sheet to bake for 8-10 minutes.
  4. Pull ice cream out of the freezer and allow to soften. Spread into a cookie sheet, using a circle cookie cutter and place between two same sized cookies.
