Slow Cooker Balsamic Pork

Matt got me a treadmill for Christmas and I absolutely love it. It’s exactly what I wanted! With it being the new year we are trying to eat a little more healthy and exercise more often. You will be seeing a few more healthy recipes from me. I won’t go too crazy though. First thing is this pork was AMAZING!! I don’t love pork but this was really flavorful! Also, super easy to make. It’s the season of softball open gyms and soon to be softball season, which is super exciting, however, there is no time to cook a healthy dinner. Slow cooker is where I’m going to live for the next couple months. We are doing our shopping on Saturdays and making a week long menu so that we can have healthy good food on hand. So far this has been an absolute success. You should give this pork a try you won’t regret it!

Ingredients
2 pound boneless pork shoulder roast
1 tsp kosher salt
1/2 tsp garlic powder
1/3 cup chicken broth
1/3 cup balsamic vinegar
1 tablespoon Worcestershire sauce
1 tablespoon honey

Directions
1. Dry rub the pork with salt and garlic powder, place in the crock pot.
2. Whisk together chicken broth, balsamic and Worcestershire and then pour over the top of the pork. Then drizzle the honey on top of that.
3. Cook on low for 6 to 8 hours or on high for 4 hours.
