Tomato Basil Soup! This is the best thing to eat on a rainy fall day! Tomato Basil soup and grilled cheese sandwiches!! This recipe really didn’t take very long to make. You won’t regret making this, it was delicious!!

Tomato Basil Soup

Ingredients

1 tablespoon olive oil
1 medium onion minced
3 garlic cloves
2 28oz cans crushed tomatoes
3 cups chicken broth
3/4 cup heavy cream
1/3 cup basil
1/3 cup sugar
1 tablespoon minced parsley
1/4 teaspoon oregano
1 teaspoon salt
1/2 teaspoon black pepper

Tomato Basil Soup

Directions

1. Heat the olive oil in a large pot over medium heat. Then add the onion and garlic. Sauté until the onions go clear. Add crushed tomatoes and chicken broth and bring mixture to a boil. Then reduce the heat and simmer for 20 minutes.
2. Turn off the heat and allow to cool uncovered for 30 minutes. Pour ingredients into a blender, it will be hot still so make sure to hold down the lid with a towel so it doesn’t splatter. Blend on high for about a minute, pour mixture back into the pot.
3. Add the remaining ingredients. Bring the soup back up to a bubble then reduce the heat and simmer for about 20 minutes. Serve approximately one cup of soup. We ate our soup with a grilled cheese. delicious!
