Tomato Basil Soup


This is the best thing to eat on a rainy fall day! Tomato soup and grilled cheese sandwiches!! This recipe really didn't take very long to make. You won't regret making this, it was delicious!!

Ingredients
1 tablespoon olive oil
1 medium onion minced
3 garlic cloves
2 28oz cans crushed tomatoes
3 cups chicken broth
3/4 cup heavy cream
1/3 cup basil
1/3 cup sugar
1 tablespoon minced parsley
1/4 teaspoon oregano
1 teaspoon salt
1/2 teaspoon black pepper

Directions
1. Heat the olive oil in a large pot over medium heat. Then add the onion and garlic. Sauté until the onions go clear. Add crushed tomatoes and chicken broth and bring mixture to a boil. Then reduce the heat and simmer for 20 minutes.
2. Turn off the heat and allow to cool uncovered for 30 minutes. Pour ingredients into a blender, it will be hot still so make sure to hold down the lid with a towel so it doesn't splatter. Blend on high for about a minute, pour mixture back into the pot.
3. Add the remaining ingredients. Bring the soup back up to a bubble then reduce the heat and simmer for about 20 minutes. Serve approximately one cup of soup. We ate our soup with a grilled cheese. delicious!

  5. Tomato soup and grilled cheese is one of hubby's favorites, especially on a cold, rainy day, and we've definitely been having a lot of those lately! Maybe I'll have to make this tomato basil soup. :)
