My family is super cool and on Christmas for dinner, we each get to pick something we want to eat and have a modge podge of foods. For example yesterday we had Ham, cheesy potatoes, hot wings, cheese balls, bean dip, potstickers, jalapeño poppers, cheesecake, and pie.

 

That’s right no vegetables on Christmas, it was “Calorie-free Christmas”! My husband wanted to eat Jalapeño poppers so I made those. Here is our simple recipe.

 

Bacon Wrapped Jalapeño Poppers

Ingredients

 

20 Jalapeños
1 8 oz package of Philadelphia Cream Cheese
1 cup of sharp cheddar cheese
40 slices of bacon

Directions

Preheat oven to 400 degrees.

We did sort of an assembly line, Zac cut the jalapeños in half so we made 2 out of each jalapeño. Then he de-seeded them, I would wash them out with water. Next, I mixed the cheeses together in a bowl with a hand mixer.  Then I stuffed each jalapeño with the cheese mixture (remember that the cheese will melt out so don’t put too much in) and then Zac wrapped each one with bacon.

We put ours on parchment paper and put them in the oven for 20 – 30 minutes, we put ours in until the jalapeño changed to a lighter green and the bacon is crispy. If the bacon isn’t crispy enough for you put it in the oven on broil until it reaches the desired crispiness.
